We have been using version 18 with no issues. You may not have a choice in which version you upgrade to. From looking at the site, they only make the latest version available for sale.

We have a similar process. I try to break down the build to small chunks that can be done in 20 minute chunks. The kids can accomplish a lot when it is broken down in small chunks.
